Ingredients
- 1 lb Mild Italian sausage
- 1 Yellow onion (Diced)
- 2 cup Fresh spinach (Chopped)
- 1.5 tbsp Garlic (Minced; source gives a range of 1–2 tablespoons)
- 2 cup Chicken or beef bone broth (The author used chicken broth)
- 2 cup Heavy cream
- 3 oz Parmesan cheese (Grated; reserve extra for serving if desired)
- 0.5 tsp Salt
- 1 tsp Black pepper
- 1 tsp Italian seasoning
- 1 tsp Oregano
- 1 tsp Parsley
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Crushed red pepper flakes (Optional)
- 16 oz Gnocchi
- 1 tbsp Tomato paste
- Olive oil (A little, for cooking)
Steps
- 1
Heat a little olive oil in a large pot over medium heat. Add the diced onion and cook until it is soft and translucent.
- 2
Add the minced garlic and cook briefly, until fragrant.
- 3
Add the Italian sausage, breaking it apart as it cooks. Continue cooking until it is browned and fully cooked through.
- 4
Stir in the salt, black pepper, Italian seasoning, oregano, parsley, garlic powder, onion powder, and crushed red pepper flakes if using.
- 5
Stir in the tomato paste until it is incorporated with the sausage and seasonings.
- 6
Pour in the broth and bring the soup to a boil.
- 7
Add the gnocchi and cook for about 2–3 minutes.
- 8
Reduce the heat to low and stir in the heavy cream.
- 9
Add the grated Parmesan and stir until it melts into the broth.
- 10
Stir in the chopped spinach.
- 11
Let the soup simmer on low for another 10 minutes, allowing it to thicken and become extra creamy.
- 12
Serve the soup with extra Parmesan on top and something warm and crusty for dipping.
Notes
The source gives a 1–2 tablespoon range for minced garlic and does not specify an exact amount of olive oil. It lists chicken or beef bone broth, while noting that chicken broth was used. Serve with extra Parmesan and warm, crusty bread if desired.
