- 960 ml vegetable stock (For a gluten-free soup, use stock with a certified gluten-free symbol.)
- 1 tsp ground cumin (Use up to 1½ tsp.)
- 1 tsp ground cinnamon (Use up to 1½ tsp.)
- 0.75 tsp ground ginger
- 0.75 tsp sea salt
- 0.75 tsp freshly ground black pepper
- 400 ml canned coconut milk (Add extra coconut milk for serving if desired.)
- fresh parsley (Optional; sprinkle over the soup for serving.)
Steps
- 1
Heat the olive oil in a saucepan over medium-high heat.
- 2
Add the sliced onion and sauté for 3–4 minutes, until softened but not browned.
- 3
Add the smashed garlic, ground cumin, cinnamon, ground ginger, sea salt, and freshly ground black pepper. Sauté for 1 minute, stirring constantly, until fragrant.
- 4
Add the chopped carrots, stir to coat them in the seasoned oil, and cook for 1 minute.
- 5
Pour in the vegetable stock and bring the mixture to a boil.
- 6
Reduce the heat to a simmer, cover the saucepan, and cook for 25 minutes, until the carrots are tender.
- 7
Remove the saucepan from the heat and add the coconut milk.
- 8
Blend the soup until smooth using an immersion blender or another suitable blender.
- 9
Taste the soup and adjust the seasoning to your liking.
