Ingredients

  • 1 cup Shredded mozzarella cheese (or a blend of cheeses that melt well)
  • 0.25 Red onion (very thinly sliced)
  • 100 g Cooked chicken breast (shredded or in pieces)
  • 2 tbsp Sour cream
  • 0.5 cup Fresh spinach
  • 4 Cherry tomatoes (halved)
  • 0.25 cup Broccoli (in small florets, blanched or raw)
  • 0.5 Avocado (sliced)
  • 20 g Feta cheese (crumbled)

Steps

  1. 1

Preheat a non-stick skillet over medium heat.

  2. 2

Spread the shredded cheese evenly over the bottom of the skillet forming a circle.

  3. 3

Place the thin red onion slices over the cheese as it begins to melt.

  4. 4

Cook until the cheese is golden and crispy around the edges and easily releases from the skillet.

  5. 5

Carefully remove the cheese and onion crust from the skillet and place it on a plate or parchment paper.

  6. 6

Spread a layer of sour cream over the cheese base.

  7. 7

Add the spinach, tomatoes, broccoli, avocado, and cooked chicken to the center.

  8. 8

Sprinkle with the crumbled feta cheese.

  9. 9

Carefully fold the wrap while it is still slightly flexible and serve immediately.

Notes

You can vary the filling using burger-style ingredients (ground beef, pickles, special sauce) for a 'Big Mac' version. Make sure the onion is sliced very thin so it integrates well with the cheese.
