Ingredients

  • 1.5 lb Chicken pieces (Bone-in, skin-on thighs or drumsticks recommended for flavor)
  • 2 tbsp Vegetable oil (For browning chicken and sautéing)
  • 1 Onion (Diced)
  • 3 clove Garlic (Minced)
  • 1 tbsp Mixed spices (Such as curry powder, paprika, or chicken spice blend)
  • 2 cup White rice (Long-grain or basmati, rinsed)
  • 3.5 cup Chicken broth (Or water with bouillon)
  • Salt and pepper (To taste)

Steps

  1. 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

  2. 2

Season the chicken pieces with salt and pepper, then place them in the pot and brown on all sides until golden. Remove the chicken from the pot and set aside.

  3. 3

In the same pot, add the diced onion. Sauté for several minutes until they soften and begin to turn translucent.

  4. 4

Add the minced garlic and your choice of spices. Stir constantly for about 1 minute to allow the spices to release their flavors without burning.

  5. 5

Add the rinsed rice to the pot and stir to coat it in the spiced oil and onion mixture.

  6. 6

Pour in the chicken broth (or water) and stir to deglaze the bottom of the pot, scraping up any browned bits.

  7. 7

Place the browned chicken pieces back into the pot on top of the rice and liquid.

  8. 8

Bring the liquid to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid.

  9. 9

Simmer for 20-25 minutes, or until the rice is tender and has absorbed all the liquid, and the chicken is cooked through to an internal temperature of 165°F.

  10. 10

Remove from heat and let the pot sit, covered, for 5 minutes before fluffing the rice and serving.

Notes

The author emphasizes that 'good things take time'—don't rush the softening of the onions or the blooming of the spices as these steps build the foundation of the flavor. This is a versatile recipe that can be adapted with whatever vegetables or proteins you have on hand.
