  • 3 Garlic (Cloves; chop or mince)
  • 0.5 Red onion (Chopped)
  • 2 large Sweet potatoes (Pierce before cooking)
  • 400 g Beef mince
  • 100 g Light mozzarella (For topping)
  • 2 tbsp Italian mixed herbs
  • 1 tbsp Chilli powder
  • 2 tbsp Paprika
  • 4 tbsp Tomato paste

Steps

  1. 1

Pierce the sweet potatoes all over with a fork or knife.

  2. 2

Cook the pierced sweet potatoes in an air fryer at 190°C (375°F) for 40–45 minutes, turning halfway through, or cook them in an oven at 200°C (400°F) for 50–60 minutes, flipping halfway through.

  3. 3

While the sweet potatoes cook, fry the beef mince with the chopped red onion and garlic.

  5. 5

Stir the tomato paste through the cooked beef mixture.

  6. 6

Stir the chopped spinach through the beef mixture and cook until incorporated.

  7. 7

Remove the cooked sweet potatoes from the oven or air fryer and open them up.

  8. 8

Fill each sweet potato with the beef mixture.

  9. 9

Top the filled sweet potatoes with the light mozzarella.

  10. 10

Return the boats to the oven or air fryer and cook until the mozzarella is golden and crispy.
