Ingredients
- 2 sticks unsalted butter (At room temperature)
- 2 cups granulated sugar
- 0.667 cup light brown sugar (Packed)
- 1 tsp salt (Plus extra for sprinkling)
- 2.25 cups peanut butter (Creamy or chunky)
- 2 large eggs
- 2.25 cups all-purpose flour
Steps
- 1
Preheat the oven to 350°F (176°C), positioning the oven rack in the center. Line two baking sheets with parchment paper.
- 2
In the bowl of a stand mixer fitted with the paddle attachment, add the room-temperature butter, granulated sugar, light brown sugar, and 1 teaspoon salt. Cream until light and fluffy, at least 3 minutes.
- 3
Add the peanut butter and eggs to the creamed butter mixture, and mix well.
- 4
Add the flour and mix just until well combined. Do not continue mixing once the flour is incorporated.
- 5
Using a small cookie scoop or spoon, portion 2 to 3 teaspoons of dough for each cookie onto the prepared baking sheets, leaving 1 inch of space between the portions.
- 6
Lightly sprinkle the tops of the dough portions with additional salt.
- 7
Bake until golden, 10 to 14 minutes depending on the cookie size.
- 8
Slide the parchment paper and cookies onto a wire rack and let them cool. The cookies will be very crumbly, especially while warm.
Notes
The source specifies baking time by cookie size and notes that the cookies are especially crumbly while warm. A tester reported that larger cookies may take about 15 minutes to become golden, but the authoritative recipe gives a 10–14 minute range.
