Ingredients
- 4.5 tsp Instant yeast (Each package is ¼ ounce.)
- 80 ml Warm water (Warm, approximately 105–115°F (40–46°C).)
- 1.5 cup Milk (Whole or low-fat milk; lukewarm after heating.)
- 0.5 cup Granulated sugar
- 1 tsp Salt
- 2 Large eggs
- 0.333333 cup Butter (Softened; shortening may be used instead.)
- 5 cup All-purpose flour
- Canola oil (For frying; use enough to fill the pan to at least 3 inches deep. A neutral, high-smoke-point vegetable oil may also be used.)
- 0.5 cup Butter (Melted, for the glaze.)
- 2 cup Powdered sugar (For the glaze.)
- 2 tsp Vanilla (For the glaze.)
- 5 tbsp Evaporated milk (Use 5–7 tablespoons, adding enough to reach the desired glaze consistency; water may be substituted.)
Steps
- 1
In the bowl of a stand mixer, combine the lukewarm water and instant yeast. Let the mixture stand for about 5 minutes, until the yeast dissolves.
- 2
Meanwhile, heat the milk in a microwave-safe medium bowl for about 2 minutes. Remove it from the microwave and let it cool.
- 3
Add the cooled milk, granulated sugar, salt, eggs, softened butter or shortening, and 2 cups of the flour to the bowl containing the yeast mixture.
- 4
Mix for 2 minutes at medium speed.
- 5
Add the remaining 3 cups of flour and continue mixing the dough, scraping down the sides of the bowl as needed.
- 6
Transfer the dough to a large greased bowl. Cover it loosely with a clean cloth and let it rise in a warm, draft-free place for about 1–2 hours, or until doubled in size.
- 7
Roll the dough out on a floured surface to approximately ¼ inch thick. Cut out the doughnuts with a doughnut cutter or cookie cutters, using openings of about 1 inch and 3–4 inches.
- 8
Let the cut doughnuts stand for about 10 minutes.
- 9
Pour the canola oil into a large saucepan until it is at least 3 inches, or about 5 centimeters, deep. Heat over medium heat until the oil reaches 375°F.
- 10
Carefully place only a few doughnuts at a time into the hot oil. Fry, turning once, for about 3 minutes, or until golden brown.
- 11
Remove the fried doughnuts and drain them on prepared paper towels.
- 12
For the glaze, melt the butter in a microwave-safe bowl.
- 13
Remove the bowl from the microwave and stir in the powdered sugar and vanilla until combined.
- 14
Stir in the evaporated milk, adding enough to reach the desired glaze consistency. Water may be used instead of evaporated milk.
- 15
Dip the doughnuts in the glaze and place them on a rack, allowing the excess glaze to drip off.
Notes
The structured recipe specifies a stand mixer, but the recipe can also be mixed in a regular bowl with a large spoon or by hand; an electric mixer can be used until the dough becomes too thick, then knead by hand. The source refers to both canola and vegetable oil; it clarifies that canola is a suitable neutral vegetable oil for frying.
