Ingredients

  • 300 g Low-fat creamed cottage cheese (Coles brand recommended; use thick cottage cheese. If watery, strain out excess water.)
  • 10 g Parmesan cheese (Finely grated; Remano brand recommended. Fine grating helps absorb moisture. Avoid large shreds or thick pieces.)
  • 10 g Chipotle seasoning (Divide over the cottage cheese circles.)
  • Dip of choice (For serving.)

Steps

  1. 1

Preheat the oven to 180ยฐC and line a baking sheet with appropriate baking paper. The source notes that the paper may optionally be sprayed with olive oil, although this was not necessary for the author.

  2. 2

Spoon the cottage cheese onto the baking paper and spread it into 12 circles. Do not spread the circles too thin.

  3. 3

Top each cottage cheese circle with finely grated Parmesan and chipotle seasoning.

  4. 4

Place the baking sheet in the preheated oven and bake for approximately 40โ€“50 minutes. Check frequently because cooking times vary between ovens and the chips can overcook or burn.

  5. 5

Continue cooking until the excess moisture has evaporated and the chips are cooked through. Some water may appear during baking; this should evaporate as they continue cooking.

  6. 6

Remove the chips from the oven. They may look flat and stuck to the baking paper, but they should peel off easily when appropriate baking paper is used.

  7. 7

Serve with a dip of choice.

Notes

Texture varies depending on the cottage cheese brand and cooking time. Thick, non-watery cottage cheese works best; strain watery cottage cheese before using. If the chips are undercooked, they need additional baking time.
