Ingredients
- 8 oz Semi-sweet chocolate chips
- 2 Large eggs (At room temperature)
- 6 tbsp Unsalted butter
- 0.5 cup Granulated sugar
- 0.25 cup Light brown sugar
- 0.75 cup All-purpose flour
- 1 tsp Baking powder
- 2 tbsp Vanilla extract
- 4 tbsp Unsweetened cocoa powder
- 0.5 tsp Salt
- Flaky salt (Optional, for garnish)
Steps
- 1
Fill a saucepan with 1–3 inches of water and bring it to a simmer over medium-low heat. Place a heatproof bowl over the saucepan, making sure the bottom of the bowl does not touch the water.
- 2
Add the semi-sweet chocolate chips and unsalted butter to the heatproof bowl. Stir continuously with a rubber spatula until completely melted, about 2–5 minutes.
- 3
Remove the bowl from the saucepan and set the melted chocolate mixture aside to cool completely.
- 4
Preheat the oven to 350°F (180°C).
- 5
Crack the eggs into a mixing bowl and add the light brown sugar. Mix for 3–4 minutes, until the sugar dissolves and the mixture becomes light pale yellow.
- 6
Add the granulated sugar and mix for another 2–3 minutes, until dissolved. Thorough sugar incorporation helps create a shiny cookie top.
- 7
Add the cooled melted chocolate-and-butter mixture to the egg-and-sugar mixture, then mix well.
- 8
In a separate bowl, whisk together the all-purpose flour, baking powder, unsweetened cocoa powder, and salt.
- 9
Add the dry ingredients to the wet batter. Mix with a rubber spatula just until combined; do not overmix. The dough should have a pudding-like consistency.
- 10
Line a baking sheet with parchment paper. Scoop the dough into balls and place no more than 4 cookies per sheet, since the cookies spread during baking.
- 11
Bake for 10–12 minutes, or until the cookies have completely spread.
- 12
Allow the cookies to cool completely. Sprinkle with flaky salt, if desired, and serve.
Notes
Use room-temperature eggs and high-quality chocolate for optimal flavor. Store the cooled cookies in an airtight container at room temperature for up to 3 days. The source does not specify a dough portion size or exact cooling duration.
