Ingredients
- 1 apple (Cored; use a medium apple)
- 5.5 carrots (Source gives 5–6 carrots; estimate based on 5.5 medium carrots)
- 2 beets (Medium beets, trimmed and peeled if needed)
- 0.5 cup water
- 1 tbsp lemon juice
- 2 tbsp sweetener (Use honey or monk fruit syrup. Nutrition estimate assumes honey; monk fruit syrup may substantially reduce calories and carbohydrates.)

Prepare the produce by coring the apple and trimming the carrots and beets. Cut the produce into pieces that fit your blender.

Add the apple, carrots, beets, and ½ cup water to a blender. Blend until completely smooth, scraping down the sides if necessary.

Transfer the blended mixture to a saucepan. Stir in the lemon juice, sweetener, and agar-agar until evenly combined and no visible clumps of agar remain.

Place the saucepan over low to medium heat. Cook for 4–5 minutes, stirring constantly, until the mixture is hot and the agar-agar is fully incorporated.

Pour the warm mixture into silicone candy molds or other small molds, working carefully to avoid spills.

Refrigerate the filled molds for 1 hour, or until the gummies are set and firm. Unmold and serve chilled.
Notes
The source gives a range of 5–6 carrots; the nutrition estimate uses 5.5 medium carrots. Honey is used for the nutrition estimate, but monk fruit syrup can be used instead. Keep the gummies refrigerated.
