Ingredients
- 130 g rice flour (Additional flour can be added if the dough is too sticky.)
- 130 g almond flour
- 2 tsp baking powder (The ingredient list specifies “yeast,” but the preparation instructions specify baking powder; the value from the method has been retained.)
- 1 tsp ground cinnamon
- 0.5 tsp ground cardamom
- salt (1 pinch)
- 230 g applesauce
- 150 g almond milk
- 1 tsp vanilla extract
- 1 tsp orange flavoring
- 1 tbsp orange blossom water (Optional.)
- 4 tbsp hazelnut, cocoa, and date cream (For the filling.)
Steps
- 1
Preheat the oven to 170 °C.
- 2
In one bowl, combine the rice flour, almond flour, baking powder, cinnamon, cardamom, and salt.
- 3
In another bowl, combine the applesauce, almond milk, vanilla extract, orange flavoring, and, if desired, the orange blossom water.
- 4
Combine the dry and wet mixtures and stir until a dough forms that can be shaped into 4 balls.
- 5
If the dough is too sticky, add a little rice flour.
- 6
Flatten each dough ball.
- 7
Place the hazelnut, cocoa, and date cream in the center of each piece.
- 8
Enclose the filling with the dough and shape it into a ball again.
- 9
Gently press each ball to give the cookies their final shape.
- 10
Bake the cookies for 15 minutes in the preheated oven.
Notes
The recipe contains an inconsistency: the ingredient list specifies 2 tsp of yeast, while the preparation step specifies baking powder. The temperature is given in the source as 170 °C.
