Ingredients
- 1 tbsp olive oil
- 16 oz extra-lean ground beef
- 3 tbsp gochujang (For a less spicy soup, some or all may be replaced with tomato paste.)
- 2 tbsp coconut aminos
- 3 green onions (Thinly sliced; separate the green and white parts. Reserve the green parts for garnish.)
- 1 tsp garlic powder
- 1 tsp ground ginger
- 10 oz kimchi (Napa cabbage kimchi may be added whole if it is already bite-sized. If using kimchi from a larger container, chop it first and add some of its juices as well.)
- 15 oz Great Northern beans (Canned and drained.)
- 4 cup chicken bone broth
- salt (To taste; taste the soup before serving.)
- toasted sesame seeds (For garnish.)
- Korean chili flakes (For garnish.)
Steps
- 1
Thinly slice the green onions, keeping the white and green parts separate. If the kimchi is from a large container and is not already bite-sized, chop it; reserve some kimchi juices to add to the soup.
- 2
Heat the olive oil in a large pot over medium heat.
- 3
Add the extra-lean ground beef. Brown one side very well before breaking the beef apart, then continue cooking until it is fully cooked.
- 4
Add the gochujang, coconut aminos, sliced white parts of the green onions, garlic powder, and ground ginger to the cooked beef.
- 5
Stir the beef and seasonings together and cook for about 1 minute, until fragrant.
- 6
Add the kimchi, including some of its juices if desired, the drained Great Northern beans, and the chicken bone broth.
- 7
Bring the soup to a low boil.
- 8
Reduce the heat to low, cover the pot, and simmer for about 10 minutes.
- 9
Season with salt to taste, tasting the soup before serving.
- 10
Serve garnished with the reserved sliced green onion, toasted sesame seeds, and Korean chili flakes.
