Ingredients
- 2 lb boneless, skinless chicken thighs
- SPG seasoning (salt, pepper, garlic) (Lightly season to taste; source does not specify proportions.)
- 2 tbsp butter (Optional, for searing.)
- 1 medium onion (Sliced)
- 1 cup shoyu
- 0.25 cup water
- 1 cup brown sugar
- 2 tbsp minced garlic
- 1 tbsp ground ginger
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 3 tbsp cornstarch
- 1 tbsp gochugaru (Optional; Korean red chili pepper. Transcript also suggests red pepper flakes as an alternative.)
- 1 tsp honey (Optional.)
- broccoli (Optional; add during the final 30 minutes. Amount not specified.)
- steamed rice (For serving; amount not specified.)
- green onions (For finishing; amount not specified.)
- sesame seeds (Optional, for finishing; amount not specified.)
Steps
- 1
Pat the chicken thighs dry. Lightly season them with SPG (salt, pepper, and garlic) for extra color and flavor when searing; the amount is not specified.
- 2
Heat the optional butter in a skillet, then sear the chicken for 2–3 minutes per side. It does not need to be fully cooked through.
- 3
Slice the onion and place it in the bottom of the slow cooker. Arrange the seared chicken thighs on top.
- 4
Whisk the shoyu, water, brown sugar, garlic, ginger, sesame oil, rice vinegar, cornstarch, optional gochugaru, and optional honey together to make the sauce.
- 5
Pour the sauce over the chicken in the slow cooker.
- 6
Cover and cook on LOW for 4½ hours or on HIGH for 2–2½ hours, until tender and the chicken reaches at least 185°F.
- 7
If using broccoli, add it during the final 30 minutes of cooking.
- 8
Serve the chicken over steamed rice. Spoon the teriyaki sauce over the chicken and rice, then finish with green onions and optional sesame seeds.
Notes
SPG means salt, pepper, and garlic; the source does not give an amount. Broccoli, gochugaru, honey, butter, and sesame seeds are optional. Amounts for broccoli, rice, green onions, and sesame seeds are not specified.
