Ingredients
- Olive oil
- Ribeye steak (Sear to preferred doneness)
- Salt and pepper (For seasoning and heavily salting the pasta water)
- Thyme (For steak basting)
- 2 tbsp Butter (For basting the steak)
- 250 g Rigatoni pasta
- 350 ml Double cream
- 1 stick Butter
- 6 Garlic (Crushed or minced cloves)
- 1.5 cup Parmesan cheese (Grated; use extra for garnishing if desired)
- 1 Shallot (Diced)
- 1.5 tbsp Oregano
- 1.5 tbsp Mixed herbs
- 1.5 tbsp Paprika
- 1 tbsp Garlic powder
- Pasta water (Reserve some of the salted cooking water for the sauce)
- Parsley (For garnishing, to preference)
Steps
- 1
Bring a pot of heavily salted water to a boil and start cooking the rigatoni. When the pasta is done, set it aside and reserve some of the pasta water for the sauce.
- 2
While the pasta cooks, sear the ribeye steak in olive oil to your preferred doneness. Set the steak aside to rest.
- 3
Baste the steak with 2 tablespoons of butter and thyme as specified in the ingredient list.
- 4
Over medium-low heat, melt the stick of butter in a pan.
- 5
Add the diced shallot and sauté for about 2 minutes.
- 6
Add all of the crushed or minced garlic. Sauté and combine for another 1–2 minutes.
- 7
Add the double cream to the pan, followed by some reserved pasta water.
- 8
Add the oregano, mixed herbs, paprika, and garlic powder, then stir to combine.
- 9
Let the sauce simmer for a few minutes so the ingredients can combine.
- 10
Add the cooked rigatoni to the sauce and stir to coat the pasta.
- 11
Serve the creamy pasta, place the rested steak on top, and garnish with Parmesan and parsley to preference.
