Ingredients
- 1 garlic (Peeled)
- 0.25 small bunch Italian flat-leaf parsley (Leaves shaved from stems; discard stems)
- 0.5 lemon (Juiced)
- 0.75 lb sweet potato (Peeled and cut lengthwise into 6–8 wedges, depending on size)
- 0.125 tsp black pepper
- 0.125 tsp ground cumin
- 2 tsp extra virgin olive oil (For drizzling over the sweet potatoes)
- 0.375 tsp salt (Divided: ¼ tsp for the sweet potatoes and ⅛ tsp for the sauce)
- 3 tbsp tahini (For the dipping sauce)
- 2 tbsp water (Add more 1 tablespoon at a time if needed to reach a drizzling consistency)
Steps
- 1
Preheat the oven to 425°F.
- 2
Wash and dry the sweet potato, lemon, and parsley.
- 3
Peel the sweet potato and cut it lengthwise into 6–8 wedges, depending on its size. Transfer the wedges to a baking sheet pan.
- 4
Drizzle the sweet potato wedges with the olive oil and season with the cumin, ¼ teaspoon of the salt, and black pepper. Toss to coat, then spread the wedges in an even layer.
- 5
Place the baking sheet in the oven; it does not have to be fully heated. Roast the wedges for 20–25 minutes, flipping them halfway through, until golden brown and fork-tender. Remove from the oven.
- 6
Meanwhile, juice the lemon into a blender. A food processor may be used instead.
- 7
Shave the parsley leaves from the stems, discard the stems, and add the leaves to the blender.
- 8
Add the peeled garlic, tahini, water, and the remaining ⅛ teaspoon salt to the blender. Blend on high until smooth, adding more water 1 tablespoon at a time if needed to reach a drizzling consistency.
- 9
Divide the roasted sweet potato wedges between two plates and serve with the parsley-tahini sauce for dipping.
Notes
The recipe specifies that the baking sheet can go into the oven before the oven is fully heated. Use a blender or food processor for the sauce.
