Ingredients
- 40 g Rolled oats
- 10 g Unsweetened defatted cocoa powder
- 10 g Erythritol and stevia (Sweetener blend)
- 80 g Boiling water
- Salt (A pinch)
- 1 Egg
- 100 g 0% Greek yogurt
- 10 g Vanilla protein powder
- Cinnamon (To taste)
- Salt (A pinch, for the cream)
- 50 g Blueberries
- 20 g Chocolate peanut butter
- Oil (Only if the pan tends to stick; use a drizzle and remove the excess with kitchen paper)
Steps
- 1
The night before, place the rolled oats, unsweetened defatted cocoa powder, erythritol and stevia, and a pinch of salt in a bowl.
- 2
Add the boiling water and stir until the ingredients are well incorporated.
- 3
Cover the bowl with plastic wrap and leave it to rest overnight in the refrigerator.
- 4
The next morning, add the egg to the cold mixture and combine thoroughly with a fork. At first, the mixture will be very thick, but as you continue stirring, it will become softer and easier to handle.
- 5
Prepare the protein cream by mixing the Greek yogurt, vanilla protein powder, a pinch of salt, and the cinnamon.
- 6
Heat a pan over medium heat. If it tends to stick, add a drizzle of oil and remove the excess with kitchen paper.
- 7
Pour all the mixture into the pan and spread it out with a spatula, aiming for an even shape.
- 8
Cover the pan and cook over medium-low heat.
- 9
Check that the underside has released easily from the pan, then flip the piadina and finish cooking the other side.
- 10
Fill the piadina first with all the protein cream, then with the blueberries, and finally with the chocolate peanut butter.
- 11
Serve the filled piadina.
