Ingredients

  • 4 eggs (separated into whites and yolks)
  • 0.75 cup granulated sugar (divided (1/2 cup for yolks, 1/4 cup for whites))
  • 0.25 cup avocado oil
  • 2 tsp vanilla extract (for the cake batter)

  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract (for the whipped cream)
  • blue food coloring (to achieve the signature Zelda gloom-warding color)

Steps

    Preheat your oven to 350°F (175°C).

    Separate the 4 egg whites and the 4 egg yolks into two different large mixing bowls.

    In the bowl with the egg yolks, add 1/2 cup of granulated sugar, the avocado oil, and 2 teaspoons of vanilla extract. Mix until the mixture is light and fluffy.

    Sift the all-purpose flour, cocoa powder, baking powder, and salt directly into the yolk mixture. Mix until just combined.

    In the bowl with the egg whites, add the remaining 1/4 cup of granulated sugar. Beat the whites until stiff peaks form.

    Gently fold the egg white meringue into the chocolate batter in increments, being careful not to deflate the air, until no white streaks remain.
