Ingredients

  • 0.75 cup pizza sauce (Plus more for serving; reduce to about 1/2 cup before mixing into the filling.)
  • 1 tsp Italian seasoning
  • 0.5 tsp garlic powder
  • 0.25 tsp red pepper flakes (Optional.)
  • 1.25 cup low-moisture mozzarella cheese (Finely shredded and chopped.)
  • 0.25 cup grated parmesan cheese (Plus more for topping.)
  • 2 tsp cornstarch
  • 1.5 oz pepperoni (Very finely chopped.)
  • 18 egg roll wrappers (6 x 6 inches.)
  • water (For sealing the wrappers.)
  • 2 tbsp neutral oil (Such as avocado oil; for brushing.)

Steps

  1. 1

Add the pizza sauce, Italian seasoning, garlic powder, and optional red pepper flakes to a small saucepan. Bring the mixture to a simmer over medium-low heat, stirring occasionally, and cook it down until it is thickened and reduced to about 1/2 cup. It is ready when you can run a spatula through the sauce and it does not immediately flow back together.

  2. 2

In a large bowl, stir together the mozzarella, parmesan, and cornstarch.

  3. 3

Add the finely chopped pepperoni and thickened pizza sauce to the cheese mixture. Stir until all of the filling ingredients are evenly incorporated.

  4. 4

Place one egg roll wrapper on a flat work surface and visualize it divided into four equal quadrants. Portion 1/2 tablespoon, or 1 1/2 teaspoons, of filling into the center of each quadrant, spacing the four portions evenly.

  5. 5

Using a pastry brush or your finger, brush a liberal amount of water around each mound of filling and over the wrapper, extending all the way to the edges. Thoroughly wetting the edges is necessary for a complete seal.

  6. 6

Place a second egg roll wrapper on top. Use your hands to gently flatten the filling, then press around all four portions to seal the quadrants.

  7. 7

Using a pizza cutter or knife, cut the layered wrapper into four separate pizza rolls. Trim all four sides of each roll so only about 1/8 to 1/4 inch of wrapper remains around the filling. Check that all edges are firmly sealed.

  8. 8

Repeat the filling, sealing, cutting, and trimming process with the remaining egg roll wrappers and filling.

  9. 9

Preheat the air fryer to 350°F.

  10. 10

Arrange a single layer of pizza rolls in the air fryer basket. Brush the tops with oil, concentrating on the centers rather than the edges so the edges do not brown too quickly.

  11. 11

Air fry for 6 to 8 minutes, until the pizza rolls are golden brown and very crispy. Repeat with the remaining pizza rolls.

  12. 12

Serve the pizza rolls warm with additional pizza sauce and, optionally, parmesan sprinkled on top.

Notes

Store cooled pizza rolls in an airtight container in the refrigerator for up to 3 days. Reheat them in a 350°F air fryer for 2 to 3 minutes, until hot and crispy. If pizza rolls burst, the usual causes are insufficient water for sealing, incompletely closed edges, too much filling, or sauce that was not reduced enough. For a vegetarian version, omit the pepperoni and add more cheese or use a meat-free alternative.
