Ingredients

  • 9 oz Hand-cut thick noodles (Or use any noodles you like)
  • 1.5 tbsp Peanut butter
  • 1 tsp Chili flakes (Optional)
  • 0.333 cup Fresh green onion (Sliced; use the first portion in the sauce)
  • 2 tsp Sesame seeds
  • 5 Garlic (Cloves, minced)
  • 1 tbsp White sugar (Optional; balances the heat)
  • 1 tbsp Chili crisp (Use 1 tbsp in the sauce and 2 tbsp extra for garnish; Lao Gan Ma Spicy Chili Crisp is recommended)
  • 1 tbsp Rice vinegar
  • 2 tbsp Dark soy sauce
  • 0.333 cup Neutral oil (The source uses avocado oil)
  • 3 tbsp Reserved noodle water (Optional; use 2–3 tbsp for a silkier sauce)
  • Salt (For salting the noodle-cooking water)
  • Fresh green onion (Sliced, for garnish)
  • Lime wedges (For garnish)

Steps

  1. 1

Bring a pot of salted water to a boil. Cook the noodles according to the package instructions, undercooking them by about 30 seconds so they can finish in the sauce.

  2. 2

Save some of the noodle-cooking water, then drain the noodles and rinse them under cold water so they do not stick together.

  3. 3

Place the peanut butter, chili flakes, sliced green onion, sesame seeds, minced garlic, sugar, 1 tablespoon of the chili crisp, rice vinegar, and dark soy sauce in a cold pan. Do not turn on the heat yet.

  4. 4

Heat the neutral oil until it is very hot, then carefully pour it over the ingredients in the cold pan. Stir everything together thoroughly.

  5. 5

Add the cooked noodles to the pan and toss until they are evenly coated in the sauce.

  6. 6

For extra-silky noodles, turn the heat to medium-low, add 2–3 tablespoons of the reserved noodle water, and mix thoroughly.

  7. 7

Turn off the heat. Top the noodles with the remaining chili crisp, additional sliced green onion, and lime wedges.

Notes

The source does not specify an exact noodle-cooking time or the quantity of salt for the cooking water. The recipe recommends serving the noodles with chicken, shrimp, or tofu, but does not provide quantities or cooking instructions for those additions.
