Ingredients

  • 4 Boneless, skinless chicken thighs (Large; about 1½–2 lb total)
  • 1 tsp Garlic powder (For seasoning the chicken)
  • 1 tsp Onion powder (For seasoning the chicken)
  • 1 tsp Smoked paprika (For seasoning the chicken)
  • 1 tsp Gochugaru (For seasoning the chicken)
  • Butter (For heating in the skillet; amount not stated)
  • 2 tbsp Garlic (Minced)
  • 3 tbsp Shallot (Finely diced)
  • 2 tbsp Gochujang
  • 1 tbsp Tomato paste
  • 13.5 oz Full-fat coconut milk (1 can)
  • 1 stalk Lemongrass (Bruised; remove before serving)
  • 1 tsp Cornstarch (Optional, for thickening)
  • 1 tsp Cold water (For mixing with cornstarch, if thickening)
  • Plain panko breadcrumbs (For topping; amount not stated)
  • Chives or parsley (Sliced, for topping; amount not stated)
  • Rice (For serving; amount not stated)

Steps

  1. 1

Pat the chicken thighs dry. Lightly season them with the garlic powder, onion powder, smoked paprika, and gochugaru.

  2. 2

Heat butter in a skillet. Sear the chicken for 2–3 minutes per side; it does not need to be fully cooked.

  3. 3

Place the seared chicken in the crockpot. Add the minced garlic, diced shallot, gochujang, tomato paste, coconut milk, and bruised lemongrass. Stir the sauce ingredients around the chicken.

  4. 4

Cover and cook on HIGH for 2½–3 hours or LOW for 3–4 hours, until the chicken is tender and reaches at least 165°F (74°C).

  5. 5

Remove the lemongrass and stir the sauce well.

  6. 6

If you want a thicker sauce, mix the cornstarch with the cold water. Stir the mixture into the sauce and cook uncovered on HIGH for another 10–15 minutes.

  7. 7

Serve the chicken over rice. Spoon the creamy gochujang sauce over it, then finish with plain panko breadcrumbs and sliced chives or parsley.

Notes

The description says no sautéing is required, but its instructions explicitly call for searing the chicken in butter; the recipe extraction follows those detailed instructions. Transcript measurements differ from the written description for garlic and shallot and mention sriracha; the written description's ingredient list and steps are used as the primary authored recipe. Rice is suggested for serving but no amount is provided.
