Ingredients

  • 2 lb oxtail pieces (Trim excess surface fat if needed)
  • 1 yellow onion (Diced)
  • 4 garlic cloves (Minced)
  • 1 tbsp fresh ginger (Grated or minced)
  • 2 cup beef stock
  • 2 tbsp soy sauce
  • 0.5 cup sweet chili sauce (Divided between the cooked oxtail and pizza topping)
  • 1 lb pizza dough (Prepared dough; the post says the original recipe includes a dough recipe, but it is not provided here)
  • 8 oz mozzarella cheese (Shredded or torn)
  • 3 scallions (Thinly sliced, for finishing)
  • 1 tbsp neutral cooking oil (For browning the oxtail)
  • kosher salt (To taste)
  • black pepper (To taste)

Steps

  1. 1

Season the oxtail pieces generously with salt and black pepper. Heat the oil in a heavy oven-safe pot or Dutch oven over medium-high heat.

  2. 2

Add the oxtail in batches, avoiding crowding the pot. Brown each piece on all sides until deeply caramelized, then transfer the browned meat to a plate.

  3. 3

Add the diced onion to the same pot and cook until softened and lightly browned, about 5 minutes. Add the garlic and ginger and cook for about 30 seconds, just until fragrant.

  4. 4

Return the browned oxtail to the pot. Pour in the beef stock and soy sauce, scraping the browned bits from the bottom. Bring the liquid to a simmer.

  5. 5

Cover the pot and braise the oxtail at 325°F (165°C) for about 3 hours, or until the meat is very tender and pulls easily from the bones.

  6. 6

Remove the oxtail from the braising liquid and let it cool enough to handle. Pull the meat from the bones, discard the bones and excess connective tissue, and shred the meat.

  7. 7

Strain or skim excess fat from the braising liquid. Toss the shredded oxtail with part of the sweet chili sauce, adding enough to coat it without making it watery.

  8. 8

Place a pizza stone or steel in the oven and preheat to its highest setting, ideally 500–550°F (260–290°C), for at least 30 minutes. Stretch the pizza dough into a round on a lightly floured or cornmeal-dusted peel or baking sheet.

  9. 9

Spread a thin layer of sweet chili sauce over the dough, leaving a narrow border around the edge. Distribute the shredded oxtail evenly over the sauce.

  10. 10

Scatter the mozzarella over the oxtail, making sure the toppings are distributed evenly and the dough is not overloaded.

  11. 11

Transfer the pizza to the preheated stone or steel and bake for approximately 8–12 minutes, until the crust is browned and crisp and the cheese is melted with golden spots.

  12. 12

Remove the pizza, drizzle or brush it with additional sweet chili sauce, and top with sliced scallions. Rest for 2–3 minutes, then slice and serve hot.
