- 0.25 cup butter (Softened)
- 2 whole garlic pods (Cut the tops off before roasting)
- 1 tbsp olive oil (For drizzling over the garlic)
- 0.5 tsp black pepper (For the garlic spread; also used to season the garlic before roasting)

- 1 tsp chilli flakes
- salt (To taste, for the garlic spread)
- 1 loaf large loaf of bread (For assembly)
- mozzarella cheese (As needed for assembly)
- cilantro (For garnish)
Steps
- 1
Preheat the oven to 400°F (about 205°C). Cut the tops off the two garlic pods. Drizzle them with the olive oil, season with salt and black pepper, wrap them in foil, and bake for about 35 minutes, until soft.
- 2
Mix the chicken with the ginger garlic paste, lemon juice, Kashmiri chilli powder, coriander powder, cumin powder, garam masala, turmeric, salt, and a little oil. Marinate for at least 30 minutes.
- 3
Cook the marinated chicken over high heat until cooked through and lightly charred. Set the chicken tikka aside.
- 4
For the sauce, sauté the sliced onion in oil until soft.
- 5
Add the chopped tomatoes, ginger garlic paste, Kashmiri chilli powder, coriander powder, cumin powder, garam masala, turmeric, and salt. Sauté, cover, and cook until completely soft.
- 6
Blend the softened sauce until smooth, then return it to the pan. Add the heavy cream and cook for 1–2 minutes. Finish with cilantro or crushed kasuri methi.
- 7
Squeeze the roasted garlic from its skins into the softened butter. Add the oregano, dried parsley, chilli flakes, salt, and black pepper, then mix well to make the garlic spread.
- 8
Spread the garlic spread over the large loaf of bread. Layer on the tikka masala sauce, mozzarella, chicken tikka, and a little more mozzarella.
- 9
Bake at 400°F for about 15 minutes, then broil for 2–3 minutes until the cheese is golden and bubbly.
- 10
Garnish with cilantro and serve hot.
