Ingredients

  • 3 chicken breasts (Flattened; pat dry before seasoning.)
  • 3 tbsp olive oil (Divided: 1 tbsp for seasoning and 2 tbsp for searing.)
  • 1.5 tsp seasoning salt (For seasoning the chicken.)
  • 2 tsp paprika (For seasoning the chicken.)
  • 1 tsp Italian seasoning (For seasoning the chicken.)
  • 2 tsp garlic powder (For seasoning the chicken.)
  • 1 tsp black pepper (For seasoning the chicken.)
  • 1 cup low-sodium chicken broth
  • 7 cloves garlic (Minced.)
  • 0.25 cup white wine (Optional; for deglazing.)
  • 0.5 cup parmesan cheese (Freshly grated; plus more optionally for serving.)
  • 2 tbsp butter (For basting.)
  • 1 cup cream (Room temperature; lower-fat cream may be substituted.)
  • 0.5 tbsp cornstarch (For the sauce seasoning mixture.)
  • 1 tsp Italian seasoning (For the sauce.)
  • 1 tsp onion powder (For the sauce.)
  • 0.5 tsp salt (For the sauce.)
  • 2 tsp black pepper (For the sauce.)
  • fresh chives (Thinly sliced, for garnish.)
  • 3 lb russet potatoes or Yukon Gold potatoes (For the mashed potatoes.)
  • 0.25 cup salted butter (Melted; for the mashed potatoes.)
  • 1 garlic head (Halved; for the mashed potatoes. The source does not provide mashed-potato cooking instructions.)
  • 0.75 cup milk or cream (For the mashed potatoes.)
  • salt (To taste, for the mashed potatoes.)

Steps

  1. 1

Pat the chicken breasts dry with paper towel. Flatten each breast with a mallet or a sturdy plate so they cook evenly.

  2. 2

Place the chicken in a bowl. Add 1 tablespoon of the olive oil and all of the chicken seasonings: seasoning salt, paprika, Italian seasoning, garlic powder, and black pepper. Toss until the chicken is coated all over.

  3. 3

Heat the remaining 2 tablespoons olive oil in a large pan over medium-high heat.

  4. 4

Once the oil is hot, add the seasoned chicken without overcrowding the pan. Sear for about 5 minutes per side, until golden.

  5. 5

Add the butter to the pan and baste the chicken with the melted butter. Continue for 2 more minutes, then set the chicken aside.

  6. 6

Pour the white wine into the same pan, if using, to deglaze. Cook for 2 minutes, scraping up the browned bits from the bottom of the pan as the wine cooks off.

  7. 7

Add the minced garlic and sauté for 1 minute, until fragrant.

  8. 8

Add the cornstarch, Italian seasoning, onion powder, salt, and black pepper for the sauce. Stir and cook for 1 minute.

  9. 9

Pour in the chicken broth and bring it to a boil.

  10. 10

Reduce the heat to a low simmer. Stir in the room-temperature cream and let the sauce gently bubble for a few minutes.

  11. 11

Add the grated parmesan and stir until incorporated into the sauce.

  12. 12

Return the chicken to the pan and spoon the creamy sauce over it, allowing the chicken to briefly warm and bathe in the sauce.

  13. 13

Serve the chicken and sauce over mashed potatoes, rice, or pasta. Garnish with sliced fresh chives and, optionally, an extra sprinkle of parmesan.
