Ingredients

  • 1 cup red lentils (dry, rinsed and soaked for at least 3 hours)
  • 0.5 cup water (for blending)
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp oregano (dried)
  • 1 tsp olive oil (for greasing the pan)

    Rinse 1 cup of dry red lentils thoroughly under cold water until the water runs clear.

    Place the rinsed lentils in a bowl and cover with water. Let them soak for at least 3 hours, or overnight.

    Drain the soaked lentils and discard the soaking water.

    Preheat your oven to 400°F (200°C).

    Transfer the drained lentils to a blender. Add 1/2 cup of fresh water, garlic powder, salt, and dried oregano.

    Blend on high speed until the mixture is completely smooth and resembles a thick pancake batter.

    Line a pizza pan or baking sheet with parchment paper and lightly grease it with olive oil to prevent sticking.

    Pour the lentil batter onto the prepared pan and spread it out into a thin, even circle using the back of a spoon.

    Bake the crust in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is firm.

    Remove the crust from the oven. Flip it over carefully if you prefer a crispier bottom.

Notes

For the best texture, ensure the lentils are soaked for the full 3 hours. If the batter seems too thick to blend, add water 1 tablespoon at a time until it moves freely. This crust is naturally gluten-free and vegan.
