Ingredients
- 4 cup rolled oats
- 1 cup sliced almonds
- 1 cup shredded coconut
- 1 tsp cinnamon
- 0.5 cup walnuts
- 0.5 cup pecans
- 0.5 cup coconut oil (melted)
- 0.5 cup maple syrup
- 0.333 cup honey
- 0.25 cup coconut sugar (Can also use brown sugar.)
- 2 tsp salt
- 2 tsp vanilla extract
Steps
- 1
Preheat the oven to 350°F (175°C).
- 2
In a medium bowl, mix together the rolled oats, sliced almonds, shredded coconut, cinnamon, walnuts, and pecans.
- 3
In a smaller bowl, mix together the melted coconut oil, maple syrup, honey, coconut sugar, salt, and vanilla extract.
- 4
Pour the wet mixture over the dry ingredients and mix until everything is combined and evenly coated.
- 5
Line a baking sheet with parchment paper and pour the granola mixture onto it. Spread it evenly and pack it down firmly with a spatula. Avoid overcrowding the pan.
- 6
Bake for 15–22 minutes, until the top of the granola is a darker golden color. Check it after about 12 minutes and continue monitoring in 2-minute increments to avoid overbaking.
- 7
Let the granola cool undisturbed for 10–15 minutes before touching it; this helps create clusters.
- 8
Enjoy.
Notes
The creator says the nuts and seeds can be varied. The transcript suggests the amount of dry ingredients can also be adjusted, but the written recipe measurements are retained here. The transcript also advises using only enough wet mixture to coat the dry ingredients, since an overly soggy mixture may not harden properly.
