Ingredients
- ginger (Sliced; peeling is optional—the creator says it does not need to be peeled.)
- spring onions (Blitzed into chunks.)
- neutral oil (Use vegetable oil or rapeseed oil. Add enough to finish just above the ginger and spring onions; the creator recommends a neutral oil with a higher smoke point than olive oil.)
- chicken powder (Optional; add a dash according to personal preference.)
- pure sesame oil (Optional; the creator specifically mentions LKK sesame oil and adds a dash according to personal preference.)
- boiled rice (Optional serving suggestion.)
- fried egg (Optional serving suggestion; serve runny.)
Steps
- 1
Slice the ginger so it can fit into a food processor. Peeling is optional; the creator says the ginger does not need to be peeled.
- 2
Blitz the sliced ginger in a food processor, but do not process it for too long. Leave it in rough chunks rather than making a smooth paste.
- 3
Blitz the spring onions separately, also leaving them in chunks.
- 4
Add the chopped ginger and spring onions to a heatproof container or jar. Pour in enough neutral oil to finish just above the aromatics.
- 5
Heat the oil and aromatics. As soon as the oil starts to smoke, turn off the heat.
- 6
Transfer the oil mixture to a jar if it is not already there. If too much oil was added, pour the excess into the bottle after the oil has cooled.
- 7
Once the oil is prepared, optionally season it with a dash of chicken powder and a dash of pure sesame oil, according to personal preference.
- 8
Use the ginger and spring onion oil as a finishing oil over steamed fish, poached chicken, rice, noodles, seafood, or other dishes.
- 9
For the creator's suggested snack, serve boiled rice with a runny fried egg and spoon ginger and spring onion oil over the top.
Notes
The source does not provide quantities, yield, storage instructions, or an exact heating time. Use caution when heating oil and transfer it carefully to the jar. The creator says excess oil can be bottled after cooling.
