Ingredients
- 1 lb boneless, skinless chicken breast (boiled and shredded)
- 6 potatoes (large, boiled)
- 0.5 cup carrots (finely diced and boiled)
- 0.5 cup bell pepper (finely chopped)
- 0.5 cup green onion (finely chopped)
- 1 cup mozzarella cheese (shredded)
- 1 large egg
- 3 tbsp cornstarch
- salt (to taste)
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp chicken powder
- 2 Serrano peppers (2–3 peppers, finely chopped; optional)
- 1 tbsp fresh parsley (chopped)
- oil (for frying; lightly spray for air frying)
- 1 cup bread crumbs (for coating)
- 0.5 cup all-purpose flour (for coating slurry)
- 0.333 cup water (mix with flour to make a thick slurry)
Steps
- 1
In a large bowl, combine the boiled potatoes, shredded chicken, boiled diced carrots, chopped Serrano peppers if using, bell pepper, green onion, egg, cornstarch, salt, black pepper, garlic powder, chicken powder, mozzarella, and chopped parsley. Mix until the mixture is well combined and sticky.
- 2
In a separate bowl, mix the all-purpose flour and water to form a thick paste.
- 3
Place the bread crumbs in another bowl.
- 4
Shape the potato-chicken mixture into doughnut shapes and place them on a tray.
- 5
Freeze the shaped doughnuts for 30 minutes.
- 6
Coat each doughnut in the flour slurry, then coat it in the bread crumbs.
- 7
At this point, freeze the coated doughnuts for later use if desired, for up to 2 months.
- 8
For frying, heat oil in a pan over medium heat. Fry the doughnuts for 2–3 minutes, flipping them to cook both sides, until golden brown and crispy. Do not overcrowd the pan.
- 9
For air frying, lightly spray the coated doughnuts with cooking oil and air fry at 400°F (200°C) for 10 minutes, flipping halfway through.
Notes
The source does not specify the amount of frying oil or the boiling times for the chicken, potatoes, and carrots. Adjust the Serrano pepper quantity for desired spiciness. Different cheese combinations may be used.
