Ingredients

  • 2 tbsp olive oil
  • 1.5 cup frozen peppers and onions (Alternatively, dice 1 small onion and 1 small red or green pepper and use fresh.)
  • 1 tbsp minced garlic
  • 0.5 tbsp chili powder
  • 0.5 tbsp Mexican oregano (Regular oregano may be used instead.)
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cup chicken broth (Homemade or boxed broth may be used.)
  • 11 oz Mexi corn (Use the entire can, including its liquid.)
  • 14 oz diced tomatoes (Use the entire can, including its liquid.)
  • 15 oz black beans (Drain and rinse before adding.)
  • 10 oz red enchilada sauce (This is approximately half of a larger can.)
  • 1 lime juice (Juice of 1 small lime.)
  • 2 cup cooked shredded chicken
  • 1 cup half-and-half (Heavy cream may be used instead.)
  • 1 cup shredded cheddar cheese

Steps

  1. 1

Heat a large 6-quart pot over medium-high heat. Add the olive oil to the hot pot.

  2. 2

Add the frozen peppers and onions. Cook for 5–7 minutes, until the vegetables are tender. If using fresh vegetables, use the diced onion and red or green pepper instead.

  3. 3

Add the minced garlic and cook for 30 seconds.

  4. 4

Add the chili powder, Mexican oregano, cumin, onion powder, garlic powder, salt, and black pepper. Cook the seasonings for about 1 minute.

  5. 5

Add the chicken broth, Mexi corn with its liquid, diced tomatoes with their liquid, drained and rinsed black beans, and red enchilada sauce.

  6. 6

Add the juice of the small lime, then add the cooked shredded chicken.

  7. 7

Cover the pot, keep the heat at medium, and bring the soup to a simmer. Cook for 15 minutes.

  8. 8

Reduce the heat to low and add the half-and-half, or heavy cream.

  9. 9

Add the shredded cheddar cheese. Let the soup simmer for another 5 minutes, or until the cheese has melted. Serve and enjoy.
