Ingredients

  • 1 kg 5% beef mince (Cook in two batches)
  • 2 Carrots (Medium-sized, prepared for frying)
  • 1 White onion (Prepared for frying)
  • 3 Celery sticks (Prepared for frying)
  • 3 Garlic cloves (Prepared for frying)
  • 2 tbsp Tomato purée (Large tablespoons)
  • Red wine (One large glass; exact volume not specified)
  • 600 ml Beef stock
  • Rosemary (A few sprigs)
  • Thyme (A few sprigs)
  • 0.6667 tbsp Henderson’s relish (Source states 2/3 tbsp)
  • 500 g Potatoes (Approximate amount; peeled)
  • 1 Swede (Medium-sized; peel before boiling)
  • 100 g Butter
  • 3 Egg yolks
  • 100 g Mature cheddar cheese
  • 80 g Parmesan cheese (Additional Parmesan is sprinkled over the assembled pie; exact extra amount is not specified)
  • Seasoning (Salt and pepper to taste)
  • Chives (Chopped, for garnish)

Steps

  1. 1

    Preheat the oven to 180°C.

  2. 2

Fry the beef mince with salt and pepper in a pan over medium-high heat until golden brown, working in two batches so the mince browns properly.

  3. 3

Remove the browned mince from the pan and set it aside.

  4. 4

In the same pan, fry the onion, carrots, celery, and garlic until the vegetables have softened.

  5. 5

Add the tomato purée and cook for a few minutes.

  6. 6

Add the red wine and reduce it by at least half.

  7. 7

Add the rosemary, thyme, Henderson’s relish, and beef stock.

  8. 8

Simmer over medium heat until the sauce has reduced and thickened, usually about 40 minutes.

  9. 9

Peel the potatoes and swede, then boil them until fork-tender.

  10. 10

Pass the cooked potatoes and swede through a potato ricer.

  11. 11

Add the butter, egg yolks, mature cheddar, Parmesan, and seasoning to the riced vegetables, then mix well.

  12. 12

Transfer the beef filling to an ovenproof dish.

  13. 13

Spread the potato-and-swede mash over the filling, then sprinkle additional Parmesan over the top.

  14. 14

Bake in the preheated oven at 180°C for 30–40 minutes, or until the topping is golden brown.

  15. 15

Remove the cottage pie from the oven and leave it to set slightly before cutting.

  16. 16

Garnish with chopped chives, divide into portions, and serve.

Notes

The source does not specify the volume of the large glass of red wine or the exact amount of additional Parmesan used on top. The source gives the baking time as 30/40 minutes, interpreted as 30–40 minutes.
