Ingredients

  • 2.25 cup whole spelt flour
  • 3 tbsp ground flaxseed
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt (Optional)
  • 0.5 cup walnuts (Chopped)
  • 1 tbsp apple cider vinegar
  • 1.0625 cup plant milk (Divided: 1 tablespoon for the walnut paste, remaining amount for the dough. Nutrition and grams estimated using unsweetened soy milk.)
  • 2 tsp caraway seeds

Steps

  1. 1

Line a baking sheet with parchment paper. Preheat the oven to 400°F (200°C).

  2. 2

In a medium bowl, combine the whole spelt flour, ground flaxseed, baking soda, baking powder, and salt if using. Set the dry mixture aside.

  3. 3

Put the chopped walnuts, apple cider vinegar, and 1 tablespoon of plant milk in a food processor. Pulse several times until they form a relatively smooth paste. If needed, use a spatula to push walnut pieces down from the sides of the bowl.

  4. 4

Add the dry mixture to the walnut paste in the food processor. Pulse 3 or 4 times, until the mixture is sandy and slightly lumpy.

  5. 5

Add the remaining plant milk. Pulse 3 or 4 times, until the ingredients are almost—but not completely—incorporated. If necessary, scrape down the sides of the bowl with a spatula to bring the mixture together.

  6. 6

Add the caraway seeds. Pulse 2 or 3 times, until a smooth ball of dough forms.

  7. 7

Shape the dough into 6 equal-size balls. Place them on the prepared baking sheet about 2 to 3 inches apart. Press each ball down by hand into a disk about 1 inch thick.

  8. 8

Bake in the preheated 400°F (200°C) oven for 12 to 14 minutes, until the biscuits are golden on top.

  9. 9

Serve immediately, or let the biscuits cool and store them in an airtight container. They keep fresh longer in the refrigerator; reheat before serving.

Notes

The author says refrigerated biscuits keep for up to a week and can be sliced and browned in a toaster. For smaller biscuits, the author suggests making 8–10; they will probably need less baking time. Suggested ways to serve include gravy, soup, tahini with berry compote, or breakfast sandwiches with tofu scramble. The source does not specify the type of plant milk; nutrition is estimated using unsweetened soy milk.
