Ingredients
- 1 kg beef or mutton bones (A mix of knuckle, marrow, and rib bones; wash thoroughly.)
- 2 onions (Cut into chunks.)
- 1 bulb garlic (Halved.)
- 2 in ginger
- 1 carrot (Chopped.)
- fresh herbs (A handful of parsley, dill, or coriander.)
- 2 bay leaves
- 0.5 tsp peppercorns
- 1 cinnamon stick
- 1 tsp cumin seeds
- cloves (A few cloves.)
- 1 tsp fennel seeds
- 0.5 tsp oregano
- 1 tbsp salt (For the broth.)
- 1 tsp turmeric
- 2 tbsp apple cider vinegar
- water (As required; top up during cooking if a runnier broth is desired.)
- salt (Add some when reheating the broth, to taste.)
- lemon juice (Add when reheating, to season.)
Steps
- 1
Preheat the oven to 180°C (350°F).
- 2
Wash the beef or mutton bones thoroughly and arrange them on a baking tray.
- 3
Roast the bones for 30–40 minutes, until browned and fragrant.
- 4
Transfer the roasted bones to a large pot. Add the onions, garlic, ginger, carrot, fresh herbs, bay leaves, peppercorns, cinnamon, cumin seeds, cloves, fennel seeds, oregano, salt, turmeric, apple cider vinegar, and enough water to cover or cook the ingredients as required.
- 5
Bring the pot to a rolling boil, then reduce the heat to the lowest setting.
- 6
Cook for 12–24 hours, stirring occasionally. For a runnier broth, top up with additional water as needed.
- 7
Once cooked, carefully remove the bones and strain the broth.
- 8
Refrigerate the strained broth for at least 4–5 hours, until the broth sets into a jelly and the tallow forms a layer on top.
- 9
Carefully remove the layer of beef tallow from the top and store it for later use.
- 10
Reheat portions of the broth as required. Season with some salt and lemon juice, then enjoy warm.
Notes
The source does not specify the amount of water or the final yield. Refrigeration is used to separate the tallow from the set broth. The recipe gives a broad simmering range of 12–24 hours.
