Ingredients
- 500 g Bacon (Fettayleh beef bacon, centre-cut bacon, or turkey bacon)
- 400 g Potato gems/tater tots
- 0.5 Brown onion (Diced)
- 1 kg Extra-lean beef or chicken sausages (Seasoned with all-purpose seasoning)
- All-purpose seasoning (Use a generous amount, as stated in the source)
- 8 Eggs (Whisked)
- 300 g Egg whites (Whisked together with the eggs)
- Salt (Season the cooked eggs after scrambling)
- Chives (Diced)
- 10 Large low-carb tortillas (Mission Large Carb Balance tortillas; warm before filling)
- 40 g Light cheddar cheese (Bega 50% Less Fat grated cheese)
- Cooking oil spray (For the pan)
Steps
- 1
Air-fry the potato gems or tater tots at 190°C/375°F for 7–8 minutes, flipping them halfway through cooking. If cooking the bacon at the same time, remove the potatoes earlier when finished.
- 2
Air-fry the bacon at 190°C/375°F for 15–20 minutes, or cook it at the same time as the potatoes and remove the potatoes first. Set the cooked bacon aside.
- 3
Season the lean beef or chicken sausages generously with all-purpose seasoning.
- 4
Cook the seasoned sausages with the diced onion in a pan over medium-high heat. Once cooked, set the sausage mixture aside.
- 5
Lower the heat under the same pan and spray it with cooking oil.
- 6
Add the whisked eggs and egg whites to the pan. Stir and fold continuously until fluffy, then season with salt.
- 7
Place the cooked potato gems in a large bowl and mash them.
- 8
Add the cooked sausage and onion mixture, scrambled egg mixture, and diced chives to the mashed potatoes.
- 9
Dice the cooked bacon and add it to the bowl. Mix everything well to combine.
- 10
Warm one tortilla, then add one-tenth of the filling and some light cheddar cheese.
- 11
Roll the tortilla into a burrito and toast it. Repeat the filling, rolling, and toasting process with the remaining nine tortillas.
- 12
Store the burritos in the refrigerator or freezer, and reheat when ready to eat.
