Ingredients
- 4 eggs
- 2 tbsp unsalted butter or oil (Use either unsalted butter or oil.)
- 0.5 cup cherry tomatoes (Cut in half; regular tomatoes may be thinly sliced instead.)
- large jalapeños (1–2 large jalapeños, optional.)
- 0.5 cup baby spinach
- salt and pepper (To taste; salt is added during cooking and the eggs are seasoned again before covering.)
- 1 tbsp Cajun seasoning
- Mexican four-cheese blend or mozzarella (Shredded, for garnish.)
- black sesame seeds (For garnish.)
- bread (For serving.)
Steps
- 1
Heat a skillet over medium heat and add the unsalted butter or oil.
- 2
Once the butter has melted, add the halved cherry tomatoes, or thinly sliced regular tomatoes, along with the baby spinach and optional jalapeños.
- 3
Add the Cajun seasoning and salt, then cook the vegetables in the skillet until the spinach has wilted and the tomatoes are heated through.
- 4
Make four wells in the vegetable mixture, spacing them across the skillet, and crack one egg into each well.
- 5
Top the eggs with shredded Mexican four-cheese blend or mozzarella.
- 6
Season the eggs with salt and pepper, then cover the skillet with a lid.
- 7
Lower the heat to low and cook for 5–6 minutes, or until the eggs are cooked to your liking.
- 8
Garnish with black sesame seeds and serve with bread.
