Ingredients
- 2 salmon filets (6-8 oz each)
- 2 tsp salt (for salmon seasoning)
- 0.5 tsp pepper
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp paprika
- 2 tsp garlic & herb seasoning
- 2 tbsp honey (for glaze)
- 1 tbsp sriracha (for glaze)
- 2 tsp soy sauce (for glaze)
- 2 tsp lime juice (for glaze)
- 0.5 cup mango (diced)
- 0.33 cup avocado (diced)
- 2 tbsp red onion (diced)
- 0.5 tsp salt (for salsa)
- 2 tsp cilantro
- 1 cup cooked coconut ginger rice
Steps
- 1
In a small bowl, combine the 2 tsp salt, 1/2 tsp pepper, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp paprika, and 2 tsp garlic & herb seasoning.
- 2
Season the salmon filets evenly with the prepared seasoning mixture.
- 3
Place the salmon in the air fryer and cook at 400°F (200°C) for 12-15 minutes, depending on the thickness of the filets.
- 4
While the salmon cooks, prepare the glaze by mixing 2 tbsp honey, 1 tbsp sriracha, 2 tsp soy sauce, and 2 tsp lime juice in a small bowl.
- 5
Once the salmon is cooked, brush the glaze generously onto the top of each filet.
- 6
In another bowl, combine the diced mango, diced avocado, diced red onion, 1/2 tsp salt, and 2 tsp cilantro to make the salsa.
- 7
Assemble the bowls by dividing the cooked coconut ginger rice between two bowls, topping each with a salmon filet and a portion of the mango-avocado salsa.
