Ingredients
- 1 lb Boneless skinless chicken breasts
- 12 oz Canned corn (Drained)
- 14 oz Canned black beans (Drained and rinsed)
- 28 oz Canned diced tomatoes (Include the juices)
- 10 oz Canned Rotel tomatoes (Alternatively, use one 10-ounce can of tomatoes and a small can of green chilies)
- 1 cup White onion (Diced)
- 1 Green pepper (Diced)
- 2 tbsp Taco seasoning
- 2 tbsp Ranch seasoning
- 2.5 cup Water or chicken broth (Add when cooking; the source recommends omitting it from the freezer pack and adding it on cooking day)
- Cilantro (Optional, for serving)
- Corn chips (Optional, for serving)
Steps
- 1
For freezer prep, place the chicken breasts, drained corn, drained and rinsed black beans, diced tomatoes with their juices, Rotel tomatoes, diced onion, diced green pepper, taco seasoning, and ranch seasoning in a freezer-safe zip bag. Leave out the water or chicken broth. Remove as much air as possible, seal the bag, and label it with the cooking instructions.
- 2
When ready to cook, add the freezer-meal contents and the water or chicken broth to the Instant Pot. If frozen, thaw the meal first; the source notes that thawing overnight is typical.
- 3
Secure the Instant Pot lid and set the valve to Sealing.
- 4
Set the Instant Pot to Manual or High Pressure for 5 minutes.
- 5
When the pressure-cooking cycle is complete, allow the pot to naturally depressurize for 10 minutes. Then quick-release any remaining pressure.
- 6
Using tongs, remove the cooked chicken breasts from the soup. Shred the chicken, then return it to the pot and stir it into the soup.
- 7
Serve with optional cilantro and corn chips.
Notes
The recipe has a 5-minute pressure-cooking time, but the total time is just under 1 hour because of the time required for the pot to reach pressure and the 10-minute natural release. The author recommends adding the liquid on cooking day rather than freezing it, although it can be included in the freezer pack if preferred. The recipe may be frozen either before cooking as a raw freezer meal or after cooking for grab-and-go lunches.
