Ingredients
- Roma tomatoes (Sliced in half; amount not specified)
- Cherry tomatoes (Amount not specified)
- 1 White onion (Chopped)
- Garlic cloves (4–5 cloves)
- Fresh oregano (Sprinkled over the vegetables; amount not specified)
- Fresh basil (Sprinkled generously over the vegetables; the creator recommends using more basil)
- Salt (To taste)
- Black pepper (To taste)
- Olive oil (Drizzle generously over the tomatoes and onion)
Steps
- 1
Slice the Roma tomatoes in half. Chop the white onion. The creator uses both Roma and cherry tomatoes and does not blanch, peel, or core them.
- 2
Arrange the sliced Roma tomatoes, cherry tomatoes, and chopped onion on a sheet pan.
- 3
Add 4–5 garlic cloves to the sheet pan.
- 4
Sprinkle fresh oregano and basil over the vegetables. Use extra basil if desired, as the creator recommends more basil.
- 5
Season the vegetables with salt and pepper to taste.
- 6
Drizzle the vegetables generously with olive oil.
- 7
Roast the sheet pan in a 400°F oven for 30 minutes.
- 8
Remove the roasted vegetables from the oven and let them cool on the counter for about 10 minutes.
- 9
Transfer some of the cooled mixture to a half-gallon mason jar, filling the jar about halfway. Work in batches if needed.
- 10
Use an immersion blender to pulse the mixture, moving the blender up and down and turning it on and off. Blend only until the sauce is combined but still slightly chunky; do not purée it completely.
- 11
Once blended, transfer or portion the sauce for canning.
- 12
Water-bath can the sauce for 35 minutes.
