Ingredients

  • 450 g ground beef or thinly sliced steak (Use either ground beef or thinly sliced steak; drain excess fat if needed.)
  • 30 g taco seasoning (Or an equivalent homemade blend.)
  • 600 g frozen French fries or freshly cut fries (Cook according to package directions or preference.)
  • salt (To taste; toss with the fries immediately after cooking.)
  • 100 g shredded cheddar cheese
  • 100 g shredded Monterey Jack cheese
  • 120 ml whole milk
  • 4 large flour tortillas (Use large tortillas sturdy enough to fold and toast.)
  • sour cream (Optional topping.)
  • hot sauce (Optional topping.)
  • guacamole (Optional topping.)
  • pico de gallo (Optional topping.)

Steps

  1. 1

Heat a large skillet over medium heat. Add the ground beef or thinly sliced steak and sprinkle it with the taco seasoning.

  2. 2

Cook the beef or steak for about 8–10 minutes, breaking up ground beef as it browns and stirring occasionally, until browned and beginning to crisp. Drain excess fat if needed.

  3. 3

Cook the French fries using your choice of oven, air fryer, or deep fryer according to the package directions or your preferred method. The fries should be hot and crisp.

  4. 4

Immediately season the hot fries with salt to taste.

  5. 5

Combine the shredded cheddar, shredded Monterey Jack, and whole milk in a small saucepan over low heat. Stir constantly for about 4–5 minutes, until the cheese has melted and the sauce is smooth and creamy.

  6. 6

Lay out the flour tortillas. On each tortilla, arrange an even layer of cooked beef, top with a portion of fries, and pour cheese sauce over the filling.

  7. 7

Add sour cream, hot sauce, guacamole, or pico de gallo to each burrito if desired.

  8. 8

Fold each filled tortilla into a burrito, securely tucking in the edges.

  9. 9

Place the burritos seam-side down in a preheated skillet and toast for 1–2 minutes on each side, until golden and crisp.

Notes

The meat and cheese sauce can be prepared a day ahead and refrigerated, then reheated before assembly. Assemble the burritos with fries and cheese sauce just before toasting so the fries retain their crunch. For freezing, assemble without fries; add fresh fries when ready to cook, then rewrap and toast. Store leftover burritos tightly wrapped in the refrigerator for up to 2 days. Reheat in a skillet or in a 350°F oven until hot in the center; microwaving may make them soggy. The source also suggests pulled rotisserie chicken or black beans in place of the beef, other melting cheeses such as Colby, mozzarella, or pepper Jack, and curly fries, steak-cut fries, or tater tots. Gluten-free tortillas may be used if sturdy enough to wrap and toast.
