Ingredients
- 2 tbsp oil
- 2 bell peppers (Roughly chopped before blending)
- 0.5 onion (Roughly chopped before blending)
- Scotch bonnet peppers (2 to 3 peppers; roughly chopped before blending)
- dried smoked catfish (Cleaned, deboned, and broken into pieces)
- 2 tbsp ground crayfish
- 1 tsp salt (Plus extra if needed)
- 1 tsp Knorr powder (Chicken bouillon powder)
- 2 cup coconut milk
- 1 cup chicken broth (Or use water)
- 2 cup rice (Washed and drained; the transcript specifies basmati rice)
- extra salt (Add to taste if needed after adding the rice)
Steps
- 1
Roughly chop the bell peppers, onion, and Scotch bonnet peppers. Add them to a chopper or food processor and blend roughly, rather than into a completely smooth purée.
- 2
Heat the oil in a pot over medium heat until hot.
- 3
Add the blended pepper mixture to the hot oil. Fry for a few minutes, stirring as needed, until the mixture has reduced and the raw pepper taste is gone.
- 4
Add the cleaned, deboned smoked catfish. Season with the measured salt and Knorr powder, then stir-fry for a few minutes so the fish and seasonings are incorporated.
- 5
Add the ground crayfish and continue frying until the mixture darkens slightly, changing to a deeper red color.
- 6
Pour in the coconut milk and chicken broth. If using water instead of broth, add the water at this point. Stir thoroughly to combine the liquid with the pepper mixture.
- 7
Add the washed and drained rice. Stir it into the coconut-pepper mixture, taste the liquid, and add extra salt if needed.
- 8
Cover the pot tightly and cook over low heat for about 30 minutes, or until the rice is tender and the liquid has been absorbed.
- 9
Mix the cooked rice well, then serve. It may be enjoyed on its own or with additional accompaniments.
Notes
The source does not specify the amount of smoked catfish or the exact quantity of Scotch bonnet peppers beyond 2 to 3 peppers. The transcript mentions serving the rice with air-fried salmon, fried shrimp, and broccolini, but these are optional accompaniments rather than recipe ingredients.
