High-Protein Almond Croissant Baked Oats

Ingredients
- 2 cup oats (rolled or old-fashioned)
- 0.25 cup almond flour (for the oat base)
- 0.25 cup hemp seeds
- 0.66 cup protein powder (vanilla or plain)
- 0.5 tsp baking powder
- 1 tsp almond extract (for the oat base)
- salt (a pinch)
- 1 banana (mashed)
- 1.25 cup almond milk
- 0.33 cup almond butter
- 2 tbsp honey (or maple syrup)
- 1 egg
- 0.25 cup almond flour (for the topping)
- 1 tsp almond extract (for the topping)
- 0.25 cup flaked almonds

Preheat your oven to 180°C (350°F).

In a 6x6-inch baking dish, combine the oats, 1/4 cup almond flour, hemp seeds, protein powder, baking powder, 1 tsp almond extract, a pinch of salt, mashed banana, and almond milk. Mix thoroughly until well combined.

In a separate small bowl, whisk together the almond butter, honey (or maple syrup), egg, 1/4 cup almond flour, and 1 tsp almond extract until the mixture is smooth.

Spoon the almond topping mixture evenly over the oat base in the baking dish.

Sprinkle the flaked almonds over the top of the almond layer.

Place the dish in the oven and bake for 30–35 minutes until the top is golden brown.

Let the baked oats cool slightly before slicing into 4 portions. Serve warm, topped with a dollop of Greek yogurt if desired.
Notes
This recipe is excellent for meal prep. You can slice it into portions and reheat them throughout the week. For the best experience, serve with Greek yogurt to add extra creaminess and protein.
