Instant Pot Chicken Bone Broth

Instant Pot Chicken Bone Broth

A minimalist, collagen-rich chicken broth made from necks, backs, and feet in the Instant Pot. The broth is cooked without roasting, aromatics, skimming, or added salt, producing a clean, deeply savory broth suitable for sipping or using in other dishes.

Ingredients

  • 2 lb Chicken necks
  • 2 lb Chicken backs
  • 1 lb Chicken feet
  • Water (Enough to cover the chicken parts in the Instant Pot)
  • Salt (Add later, when you know what the broth is for; the creator sampled the batch without salt)

Steps

  1. 1

Place the chicken necks, chicken backs, and chicken feet in an Instant Pot.

  2. 2

Add enough water to cover all of the chicken parts.

  3. 3

Seal the Instant Pot and cook at high pressure for 3 hours.

  4. 4

Allow the pressure to release naturally. Do not use a quick release: the source states that rapid steam release can disturb the broth and emulsify the fats, resulting in a cloudy broth.

  5. 5

Leave the broth unsalted initially. Salt it later when you know how you will use it; it may also be served as a sipping broth.

Notes

The source specifically calls for no roasting, no aromatics, and no skimming. The amount of water and final yield are not specified. The source does not provide instructions for straining, storing, or separating the fat.
