Ingredients
- 3 tbsp Unsalted butter (Melted)
- 1.5 cup Whole milk (Warmed)
- 3 Eggs
- 1 tbsp Granulated sugar (For the crêpe batter; source states 1/6 cup)
- 0.25 tsp Salt
- 1.5 cup Cake flour
- 1 tsp Pure vanilla extract (For the crêpe batter)
- 20 oz Heavy whipping cream
- 1 tsp Pure vanilla extract (For the cream)
- 1 tsp Vanilla bean paste
- 0.333333 cup Granulated sugar (For the cream, to taste)
- Blueberries (For decorating)
- Mint leaves (For decorating)
Steps
- 1
In a bowl, mix together the granulated sugar, eggs, and vanilla for the crêpe batter.
- 2
Add the cake flour and salt to the egg mixture.
- 3
In a separate bowl, combine the warmed milk and melted butter.
- 4
Slowly stir the milk-and-butter mixture into the flour-and-egg mixture until combined. Do not overmix.
- 5
Strain the crêpe batter at least twice to remove lumps.
- 6
Preheat a 7-inch pan or crêpe maker.
- 7
Use 1/4 cup of batter for each crêpe and cook until golden brown. Repeat until you have 20 crêpes.
- 8
Let the crêpes cool, then trim them to 6 inches in diameter.
- 9
Beat together the heavy whipping cream, vanilla extract, vanilla bean paste, and sugar until soft peaks form.
- 10
Chill the whipped cream in the refrigerator for 30 minutes.
- 11
Alternate layers of crêpes and cream, using about 1/4 cup of cream between each crêpe. Continue until all the crêpes are used, reserving enough cream to cover the cake.
- 12
Cover the sides and top of the cake with the remaining cream.
- 13
Using a spoon or the end of a spatula, create divots in the cream with a swooping motion.
- 14
Let the assembled cake sit in the refrigerator overnight before consuming.
- 15
Decorate with blueberries and mint leaves, then serve.
Notes
The transcript says the cream sugar may be adjusted to taste and mentions medium-soft peaks; the written post specifies 1/3 cup and soft peaks, which were followed here. The source does not specify a crêpe cooking temperature or exact cooking time; cook until golden brown as stated.
