Ingredients
- chicken wings (quantity not specified; joints trimmed, cartilage removed, meat pushed to one end)
- salt (to season; amount not specified)
- white pepper powder (amount not specified)
- chicken stock powder (amount not specified)
- oil (for frying; amount not specified)
- lemon zest (freshly grated, to finish; amount not specified)
Steps
- 1
Cut all the way around the joint of each chicken wing. Remove the cartilage, then gently push the meat toward one end, leaving the bone exposed to form a chicken lollipop.
- 2
Pat the chicken skin dry with a kitchen towel.
- 3
Season the wings with salt, white pepper powder, and chicken stock powder. Mix well and leave to marinate for 20 minutes.
- 4
Heat frying oil to 170°C (338°F). Carefully add the chicken in two batches so the oil temperature does not drop too much.
- 5
Fry for about 4 minutes, or until golden and crispy. The source notes that exposing the bones to the hot oil during frying may help reduce their strong smell.
- 6
Remove the chicken and bring the oil temperature up to 190°C (374°F).
- 7
Return the chicken to the hot oil and fry for another 20 seconds to make the outside extra crispy.
- 8
Quickly remove the chicken and drain it.
- 9
Finish with freshly grated lemon zest and serve.
Notes
The source gives no wing count, seasoning quantities, or frying-oil amount, so serving size is estimated. Bones exposed during frying may help reduce their strong smell.
