Ingredients
- 3 tbsp extra-virgin olive oil (Divided; 1 tablespoon for sautéing and 2 tablespoons stirred in off heat.)
- 1 tbsp onion (Chopped fine.)
- 1 cup old-fashioned grits
- 4.25 cup unsweetened almond milk
- 0.5 tsp salt (Use ½ teaspoon initially, then season to taste.)
- black pepper (To taste.)
- 1 tbsp fresh chives (Minced.)
Steps
- 1
Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat.
- 2
Add the finely chopped onion and cook until softened and beginning to brown, 5 to 7 minutes. The onion should be tender with lightly browned edges.
- 3
Stir in the grits and cook, stirring often, until fragrant, about 3 minutes.
- 4
Whisk in the almond milk and ½ teaspoon salt.
- 5
Increase the heat to medium-high and bring the mixture to a boil.
- 6
Reduce the heat to low, cover the saucepan, and simmer, whisking often, until the grits are thick and creamy, about 15 minutes.
- 7
Remove the saucepan from the heat and stir in the remaining 2 tablespoons olive oil.
- 8
Season with additional salt and pepper to taste.
- 9
Sprinkle with the minced chives and serve.
