Ingredients
Weights are estimates. Together, the ingredients weigh about 410 g before cooking, which is about 40 g per serving.
Steps
If the cottage cheese is not already smooth, blend it until creamy and free of lumps.
In a mixing bowl, combine the smooth cottage cheese, cocoa powder, and liquid sweetener until evenly mixed into a cohesive chocolate mixture.
If the mixture is too soft or sticky to shape, refrigerate it for 10–15 minutes to firm it. Dampen your hands, then roll the mixture into 10 truffle-sized balls.
Melt the dark chocolate. For microwave melting, use short 30-second bursts and stir frequently; alternatively, melt it over a double boiler, taking care not to overheat or burn it.
Coat each truffle in the melted dark chocolate, then place the coated truffles on a sheet of parchment paper.
While the chocolate coating is still unset, sprinkle the truffles with coarse salt, chopped nuts, or shredded coconut, if using.
Refrigerate the truffles until the chocolate shell has set, then serve.
Notes
If the melted chocolate is too thick for dipping, the source suggests adding 1 teaspoon of coconut oil for a smoother, glossier coating. The finished truffles should be refrigerated until the chocolate shell sets. Sweetness can be adjusted to taste.
