Ingredients

  • Chicken breast or chicken tenderloins (The creator used chicken tenderloins; quantity not shown.)
  • 0.5 tsp Garlic
  • Italian seasoning (Amount not shown.)
  • Salt and pepper (To taste.)
  • Onion (Used for flavor; amount not shown.)
  • 1 can Chicken broth
  • 2 cans Condensed cream of chicken soup (Fat-free condensed soup may be used if desired; the video shows cream of chicken with herbs.)
  • 2 cups Half-and-half
  • 1 cup Shredded cheese (Additional cheese may be used as a topping.)
  • 0.5 cup Greek yogurt or sour cream (Use either Greek yogurt or sour cream.)
  • Gnocchi or pasta (Use gnocchi or any pasta you like; amount not shown.)
  • Crispy bacon (Optional topping; amount not shown.)
  • Crusty bread (Optional accompaniment; amount not shown.)

Steps

  1. 1

Place the chicken breast or tenderloins in a crockpot. Add the garlic, Italian seasoning, salt and pepper, and onion.

  2. 2

Add one can of chicken broth and two cans of condensed cream of chicken soup. Use fat-free cream of chicken soup if desired.

  3. 3

Give the mixture a brief stir, then cover the crockpot and cook on high for 3–4 hours or on low for 4–6 hours, until the chicken shreds very easily.

  4. 4

Shred the chicken directly in the crockpot once it is tender.

  5. 5

Add two cups of half-and-half, one cup of shredded cheese, about one-half cup of Greek yogurt or sour cream, and the gnocchi or pasta.

  6. 6

Let the soup sit for about 10 more minutes, or until the gnocchi is cooked. If using pasta, cook until it is done according to the type of pasta used.

  7. 7

Serve the soup with additional cheese and crispy bacon if desired. Crusty bread may also be served alongside.

Notes

The source does not provide the amount of chicken, onion, Italian seasoning, gnocchi or pasta, or optional toppings. The creator says the soup stores well for meal prep. Use caution with the additional 10-minute cooking time if substituting pasta for gnocchi, since pasta shapes cook at different rates.
