- 0.333 cup Sun-dried tomatoes
- 1 tbsp Italian seasoning

- Black pepper (To taste, for the sauce)
- 0.75 cup Heavy cream
- 0.5 cup Pasta water
- 2 cup Spinach
- 1 cup Parmesan cheese (grated, plus extra for topping)
Steps
- 1
Season the halved chicken breast with ½ tablespoon paprika, ½ tablespoon garlic powder, ½ tablespoon onion powder, 1 teaspoon salt, and 1 teaspoon black pepper.
- 2
Heat 2 tablespoons olive oil in a large pan over medium heat. Add the chicken and cook on both sides until golden brown and its internal temperature reaches 165°F (74°C). Remove the chicken from the pan and set aside.
- 3
In the same pan, melt the butter. Add the diced onion and cook until softened and translucent.
- 4
Add the minced garlic and cook for about 1 minute.
- 5
Add the halved cherry tomatoes and cook for 2–3 minutes, until softened.
- 6
Stir in the tomato paste and sun-dried tomatoes. Cook for another minute.
- 7
Add the Italian seasoning, paprika, and salt and black pepper to taste. Stir to combine.
- 8
Pour in the heavy cream and pasta water. Mix well and simmer for about 2 minutes.
- 9
Add the spinach and grated Parmesan. Stir until the spinach wilts and the Parmesan melts into a creamy sauce.
- 10
Slice the chicken and return it to the pan. Let it simmer briefly.
- 11
Add the cooked pasta and toss until everything is coated in sauce.
- 12
Top with extra Parmesan and serve warm.
