Ingredients

  • 2 cup Rice flour (For the fried snack dough)
  • 1 cup Gram flour (Besan)
  • Salt (To taste, for the dough)
  • 0.25 tsp Asafoetida
  • 0.25 tsp Turmeric powder
  • Water (Add gradually while kneading to make a soft, smooth dough)
  • Oil (For deep-frying)
  • 1.5 tsp Sugar (For the sugar-salt powder)
  • 0.5 tsp Salt (For the sugar-salt powder)
  • 2 cup Rice flakes (For the chiwda mixture)

Steps

  1. 1

Combine the rice flour, gram flour, salt, asafoetida, and turmeric powder. Gradually add water and knead until a soft, smooth dough forms.

  2. 2

Place the dough into a chakli maker fitted with its stencil.

  3. 3

Heat oil for frying. Extrude the dough through the chakli-maker stencil into the hot oil.

  4. 4

Turn the flame to low and fry until the snack is crispy and the bubbles in the oil disappear.

  5. 5

Combine the sugar and half teaspoon of salt, then grind or crush them into a fine powder.

  6. 6

For 2 cups of rice flakes, add 1½ teaspoons of the sugar-salt powder and mix.

Notes

The source does not specify the amount of water or frying oil, the exact frying temperature, or the finished assembly of the fried snack with the rice flakes. The OCR also shows a separate sugar-salt powder used at a rate of 1½ teaspoons per 2 cups of rice flakes.
