Ingredients
- 1 lb Butternut squash (cut into fries)
- 2 tsp Extra virgin olive oil
- 2 tsp Cornstarch (arrowroot flour can be used as a gluten-free alternative)
- 0.5 tsp Black pepper
- 0.5 tsp Cayenne pepper
- 0.5 tsp Garlic powder
- 0.5 tsp Salt
- Oil (for brushing the basket)
Steps
- 1
Peel the butternut squash.
- 2
Cut the butternut squash into same-sized fries using a sharp knife. Alternatively, you may use pre-cut fries.
- 3
Ensure the fries are dry by using paper towels to thoroughly dry them.
- 4
Add 2 tsp. of cornstarch to the fries and toss until each one is lightly coated. Discard any extra cornstarch that drips down.
- 5
In a separate container, add the garlic powder, cayenne pepper, black pepper, and salt to the 2 tsp. of extra virgin olive oil.
- 6
Toss the fries in the oil and spice mixture until each one is completely covered.
- 7
Preheat the air fryer at 200°C (390°F) for 5 minutes.
- 8
Brush the air fryer basket with a little oil.
- 9
Lay the seasoned butternut squash fries in the basket. Some overlapping is fine.
- 10
Air fry at 200°C (390°F) for 10-12 minutes until they are crispy on the outside and cooked through on the inside.
- 11
Ensure that you shake the basket once every 4 minutes to promote even cooking.
- 12
Take them out and serve hot with a dip of choice or as a delicious side dish.
Notes
Arrowroot flour can be used as a gluten-free alternative to cornstarch. For a fall flavor variation, you can use a pumpkin pie spice mix. Cut the fries to similar-sized pieces to ensure even cooking.
