A comforting, creamy chicken soup made with tender vegetables, spaghetti noodles, aromatic herbs, and heavy cream. The noodles cook directly in the soup, which thickens as they absorb the seasoned broth.

Ingredients
- 2 Carrots (Large, diced)
- 2 Celery stalks (Diced)
- 0.5 Yellow onion (Large, diced)
- 2 Chicken breasts (Diced)
- 1.5 tsp Garlic powder
- 1.5 tsp Dried thyme
- 1.5 tsp Dried parsley
- 1.5 tsp Dried oregano
- 1.5 tsp Buttery garlic and herb seasoning
- 1.5 tsp Salt
- 0.5 tsp Black pepper
- 8 cup Water (Add more if you prefer a brothier soup)
- 2 tbsp Chicken base or chicken seasoning (The author uses Better Than Bouillon)
- 4 tbsp Butter
- 4.5 tbsp All-purpose flour
- 8 oz Spaghetti noodles (Break in half before adding)
- 0.5 cup Heavy cream
Steps
- 1
Melt the butter in a large pot over medium heat.
- 2
Add the diced carrots, celery, and onion. Cook for 5–7 minutes, stirring occasionally, until the vegetables begin to soften.
- 3
Add the garlic powder, thyme, parsley, oregano, buttery garlic and herb seasoning, salt, and black pepper, stirring so the herbs and seasonings can bloom with the vegetables.
- 4
Sprinkle in the flour and stir until the vegetables are evenly coated. Cook for 1–2 minutes to cook the flour.
- 5
Slowly pour in the water while stirring continuously. Add the chicken base or seasoning and stir well to combine.
- 6
Add the diced chicken breasts. Bring the soup to a gentle boil, then reduce the heat, cover the pot, and simmer for 10–15 minutes, until the chicken is cooked through and the vegetables are tender.
- 7
Break the spaghetti noodles in half and add them to the soup. Remove the lid and cook according to the package directions, stirring every few minutes, until the noodles are tender.
- 8
Reduce the heat to low and stir in the heavy cream. Cook for another 2–3 minutes, just until the cream is warmed through.
- 9
Taste the soup and adjust the seasonings as needed. For a brothier consistency, add additional water or chicken broth until it reaches the desired consistency.
Notes
The noodles continue to absorb broth as the soup sits, so add additional water or broth when reheating if needed. The transcript says to cover the pot while bringing the soup to a boil and cooking the chicken; the written instructions specify simmering for 10–15 minutes before adding the noodles.
