Ingredients

  • 1 cabbage (whole head)
  • 2.5 cup rotisserie chicken (shredded)
  • 2.5 cup mixed greens (your favorite variety)
  • 0.5 cup carrots (shredded)
  • 3 scallions (sliced thin)
  • 2 tbsp avocado oil (for pan searing)
  • 0.333 cup avocado oil (for dressing)
  • 1 tbsp sesame oil
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • 3 tsp soy sauce
  • 1 orange (juiced)
  • 0.5 shallot

Steps

    Wrap the whole head of cabbage in plastic wrap or parchment paper and place it in the freezer overnight.

    Remove the cabbage from the freezer and let it defrost fully at room temperature.

    Once defrosted, peel the leaves from the cabbage (they should be pliable and easy to remove). Let the leaves rest on a paper towel to dry.

    Prepare the Sesame-Orange Dressing by adding 1/3 cup avocado oil, sesame oil, rice vinegar, honey, soy sauce, orange juice, and the half shallot to a blender. Blend until smooth.

    In a large bowl, toss together the mixed greens, shredded carrots, sliced scallions, and 1/4 of the prepared dressing.

    Lay a cabbage leaf flat and fill it with a portion of the shredded rotisserie chicken and the dressed salad mixture.

    Wrap the cabbage leaf tightly like a burrito. Repeat for approximately 12 wraps.

    Use a paper towel to pat the outside of each wrap dry. If meal prepping, wrap in parchment or store in an airtight container.

    Just before serving, brush the outside of the wraps with 2 tablespoons of avocado oil.

    Heat a non-stick pan over medium heat and pan sear each side of the wraps until golden and slightly crispy.

    Serve immediately with the remaining dressing on the side for dipping.

Notes

Freezing the cabbage breaks down the cell structure, making the leaves soft and pliable like a tortilla once defrosted. You can substitute the chicken for canned tuna, cooked salmon, or hard-boiled eggs for a vegetarian version.
